Philly Cheesesteak Quesadilla


Ingredients

  • 2 medium/burrito-sized flour tortillas
  • ½ lb beef (ribeye or top round), thinly sliced or diced (225 g)
  • ½ medium onion, chopped (60 g)
  • ½ red bell pepper, diced (60 g)
  • ½ green bell pepper, diced (60 g)
  • 6 oz mushrooms, diced (170 g)
  • 3 slices provolone cheese, sliced in half (avoid aged cheese) (~84 g total)
  • 1 Tbsp light olive oil, divided (15 mL)
  • 1 garlic clove, minced (3 g)
  • ¼ tsp sea salt, or to taste (1.5 g)
  • ⅛ tsp ground black pepper, or to taste (0.3 g)
  • 2 tsp mayonnaise (optional, 10 g)

Instructions

1. Cook the Beef

  • In a large skillet, heat 2 tsp olive oil (10 mL) over medium heat.
  • Add ½ lb (225 g) thinly sliced beef, season with ¼ tsp salt (1.5 g) and ⅛ tsp black pepper (0.3 g).
  • Cook until the beef is browned and cooked through, about 4–5 minutes.
  • Remove from skillet and cover to keep warm.

2. Cook the Veggies

  • In the same skillet, add ½ medium onion (60 g), ½ red bell pepper (60 g), ½ green bell pepper (60 g), and 6 oz mushrooms (170 g).
  • Add another 1 tsp olive oil (5 mL) if needed.
  • Sauté over medium heat until tender, about 6–7 minutes.

3. Combine

  • Return the cooked beef to the skillet.
  • Add 1 garlic clove, minced (3 g).
  • Stir everything together and cook just until heated through, about 1 minute.

4. Assemble the Quesadillas

  • If using, spread 1 tsp mayonnaise (5 g) on one half of each tortilla.
  • Divide the beef and veggie mixture between the 2 tortillas, placing it on one side.
  • Top each with 1.5 slices provolone cheese (~42 g).
  • Fold the tortillas in half to close.

5. Cook the Quesadillas

  • Heat a clean skillet over medium heat.
  • Add a small drizzle of olive oil if you want extra crispiness.
  • Cook each folded tortilla until golden brown and crisp, about 2–3 minutes per side, flipping once.
  • Cheese should be melted and filling hot.

6. Serve

  • Slice each quesadilla into wedges.
  • Serve warm.
