Dessert - Peanut Butter Cookies¶
These ULTRA-easy, melt-in-your-mouth peanut butter cookies have just the right balance of salty and sweet. They're a quick 15-minute bake and perfect for any occasion.

🧁 Instructions¶
- Preheat the oven to 350°F (175°C).
- In a medium bowl, sift together 1½ cups (180g) of all-purpose flour and ¾ tsp (3g) of baking powder, then whisk to combine.
- In a stand mixer fitted with a paddle attachment, cream ½ cup (113g) unsalted butter, ½ cup (100g) granulated sugar, and ½ cup (100g) brown sugar until light and fluffy.
- Optional: Add ¼ to ½ tsp sea salt if your peanut butter is unsalted.
- Add 1 cup (250g) peanut butter to the creamed mixture and mix until incorporated.
- Beat in 1 large egg and 1 tsp (5mL) vanilla extract until smooth.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Roll the dough into 1-inch (2.5 cm) balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball with a fork using a criss-cross pattern.
- Bake for 10 minutes or until the edges are just set.
- Remove from oven and let cookies cool completely on the baking sheet. They will be very soft at first and will set up as they cool.
💡 Notes¶
- Cookies will continue baking slightly from residual heat, so don’t overbake.
- Letting them cool fully ensures they firm up properly while staying melt-in-your-mouth delicious.
- If using natural peanut butter, texture may vary slightly.
