Dessert - Peanut Butter Cookies

These ULTRA-easy, melt-in-your-mouth peanut butter cookies have just the right balance of salty and sweet. They're a quick 15-minute bake and perfect for any occasion.

All-purpose flour 1½ cups 180 g
Unsalted butter (room temp) ½ cup 113 g
Peanut butter 1 cup 250 g
Brown sugar (lightly packed) ½ cup 100 g
Granulated sugar ½ cup 100 g
Baking powder ¾ teaspoon 3 g
Vanilla extract 1 teaspoon 5 mL
Egg (large, room temp) 1
Sea salt (optional, if PB is unsalted) ¼ to ½ teaspoon 1–2 g

🧁 Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, sift together 1½ cups (180g) of all-purpose flour and ¾ tsp (3g) of baking powder, then whisk to combine.
  3. In a stand mixer fitted with a paddle attachment, cream ½ cup (113g) unsalted butter, ½ cup (100g) granulated sugar, and ½ cup (100g) brown sugar until light and fluffy.
  4. Optional: Add ¼ to ½ tsp sea salt if your peanut butter is unsalted.
  5. Add 1 cup (250g) peanut butter to the creamed mixture and mix until incorporated.
  6. Beat in 1 large egg and 1 tsp (5mL) vanilla extract until smooth.
  7. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  8. Roll the dough into 1-inch (2.5 cm) balls and place them on a baking sheet lined with parchment paper.
  9. Flatten each ball with a fork using a criss-cross pattern.
  10. Bake for 10 minutes or until the edges are just set.
  11. Remove from oven and let cookies cool completely on the baking sheet. They will be very soft at first and will set up as they cool.

💡 Notes

  • Cookies will continue baking slightly from residual heat, so don’t overbake.
  • Letting them cool fully ensures they firm up properly while staying melt-in-your-mouth delicious.
  • If using natural peanut butter, texture may vary slightly.
