Once the mixture reaches a rolling boil, stop stirring and let it boil exactly 60 seconds. Use a timer for precision. -
Finish the batter
Remove the pot from heat. Stir in: - 2½ cups (250 g) quick oats
- ¾ cup (188 g) creamy peanut butter

2 teaspoons (10 mL) vanilla extract
Mix until everything is fully incorporated. -
Form the cookies
While the mixture is still warm, quickly scoop about 2 tablespoons at a time onto the prepared baking sheets. You should get roughly 30 cookies. -
