Breakfast - Spicy Turkey Sausage Gravy & Biscuits

🧂 Ingredients

For the Spicy Turkey Sausage

  • 1 lb (450 g) ground turkey
  • 1 tsp (5 g) salt
  • ½ tsp (1 g) cayenne pepper
  • ¼ tsp (0.5 g) rubbed dried sage
  • ¼ tsp (0.5 g) ground black pepper
  • ¼ tsp (0.5 g) crushed red pepper flakes
  • ¼ tsp (0.5 g) ground coriander
  • ¼ tsp (1 g) MSG (Accent) (optional)

For the Gravy

  • Cooked turkey sausage (from above)
  • ⅓ cup (40 g) all-purpose flour
  • 2 tbsp (28 g) butter
  • 2–3 tsp (4–6 g) ground black pepper
  • ½ tsp (1 g) red pepper flakes (extra heat)
  • Salt to taste
  • 2½ to 3 cups (600–720 ml) milk

🧑‍🍳 Instructions

1. Make the Spicy Turkey Sausage

  1. In a bowl, combine all sausage spices with the ground turkey. Mix thoroughly until evenly combined.
  2. In a large skillet over medium heat, add a splash of oil and cook the sausage mixture. Break apart the meat and cook until browned and no longer pink.

2. Make the Gravy

  1. Sprinkle ⅓ cup flour over the cooked turkey. Stir well to coat the meat and cook the flour, about 1–2 minutes.
  2. Add 2 tbsp butter and stir until melted and incorporated.
  3. Gradually pour in milk, starting with 2½ cups (600 ml), stirring constantly to prevent lumps. Add more milk if a thinner consistency is desired.
  4. Season with black pepper, red pepper flakes, and salt to taste.
  5. Simmer until the gravy thickens to your liking, about 5–7 minutes.

3. Serve

  • Pour hot gravy generously over freshly baked biscuits.
  • Serve immediately and enjoy your spicy Southern breakfast!

📏 Notes

  • You can substitute the turkey with ground pork or chicken if preferred.
  • To make it a full breakfast, pair with scrambled eggs or hash browns.
