👨‍🍳 Instructions

  1. Mix dry ingredients:
    In a large mixing bowl, whisk together
  2. 1⅓ cups (160g) all-purpose flour
  3. 1 tablespoon (15g) baking powder
  4. 2 tablespoons (25g) granulated sugar
  5. 1 teaspoon (5g) salt

  6. Mix wet ingredients:
    In a medium mixing bowl, whisk together

  7. 1 cup (240ml) milk
  8. 1 large egg
  9. 4 tablespoons (56g) melted butter
  10. 2 teaspoons (10ml) vanilla extract
    until well combined.

  11. Combine wet and dry:
    Pour the wet mixture into the dry ingredients and gently fold until just combined. A few small lumps are okay — they help create fluffier pancakes.

  12. Preheat skillet or griddle:
    Heat a large skillet or griddle over medium-high heat (about 375°F / 190°C). Once hot, lightly grease with butter.

  13. Cook pancakes:
    Working in batches, add ¼ cup (60ml) of batter per pancake.

  14. Cook for 2–3 minutes, or until bubbles appear and edges begin to set.
  15. Flip and cook for another 1–2 minutes until golden brown.

  16. Serve:
    Serve hot with more butter and a drizzle of maple syrup. Optionally, keep cooked pancakes warm in a 200°F (95°C) oven on a wire rack set over a baking sheet.


💡 Notes

  • Measuring flour: Use a scale or fluff and spoon flour into measuring cups to avoid overpacking.
  • Don’t overmix: Overmixing can make pancakes tough.
  • Don't press down while cooking: Pressing pancakes flattens them and ruins their fluffiness.
  • Flip only once: Flip when you see bubbles pop and the edges look set.
  • Keep warm: Use a warm oven (200°F / 95°C) to hold pancakes while you cook the rest.
