Baking powder 1 tbsp 15 g

Milk 2 cups 480 ml
Unsalted butter, melted ½ cup 113 g

Vanilla extract 2 tsp 10 ml

Half Recipe (5 Waffles)

Granulated sugar 2 tbsp 25 g
Baking powder 1½ tsp 7.5 g
Salt ⅜ tsp ~2.25 g
Milk 1 cup 240 ml
Unsalted butter, melted ¼ cup ~56 g
Eggs 1 large
Vanilla extract 1 tsp 5 ml

🧑‍🍳 Instructions

  1. Preheat your waffle iron. If it has settings, select a higher/darker heat for a crispier waffle.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Mix wet ingredients: In a separate medium bowl, whisk together milk, melted butter, eggs, and vanilla extract.
  4. Combine: Pour the wet mixture into the dry ingredients and gently stir just until combined. Do not overmix—a few lumps are okay.
  5. Cook:
    • Grease the waffle iron with butter or cooking spray.
    • Pour about ⅓ cup (80 ml) of batter for each waffle (adjust based on your waffle iron size).
    • Cook until golden brown and crisp.
  6. Cool & Serve:
    • Place cooked waffles on a wire rack (not stacked) to maintain crispness.
    • Optionally, keep them warm in a 200°F / 95°C oven on the wire rack.
    • Serve hot with maple syrup, butter, or your favorite toppings.

📝 Notes

  • Room temperature eggs help with even mixing, but cold eggs work fine in a pinch.
  • For best results, weigh the flour or fluff, spoon, and level it into your measuring cup.
  • Don’t skip the resting period for the waffle iron between batches—it needs to be very hot for a crisp exterior.
