Breakfast - Spicy Turkey Sausage Gravy & Biscuits¶
A hearty Southern-style breakfast featuring a homemade spicy turkey sausage gravy, perfect over warm biscuits.

π§ Ingredients¶
For the Spicy Turkey Sausage¶
- 1 lb (450 g) ground turkey
- 1 tsp (5 g) salt
- Β½ tsp (1 g) cayenne pepper
- ΒΌ tsp (0.5 g) rubbed dried sage
- ΒΌ tsp (0.5 g) ground black pepper
- ΒΌ tsp (0.5 g) crushed red pepper flakes
- ΒΌ tsp (0.5 g) ground coriander
- ΒΌ tsp (1 g) MSG (Accent) (optional)
For the Gravy¶
- Cooked turkey sausage (from above)
- β cup (40 g) all-purpose flour
- 2 tbsp (28 g) butter
- 2β3 tsp (4β6 g) ground black pepper
- Β½ tsp (1 g) red pepper flakes (extra heat)
- Salt to taste
- 2Β½ to 3 cups (600β720 ml) milk
π§βπ³ Instructions¶
1. Make the Spicy Turkey Sausage¶
- In a bowl, combine all sausage spices with the ground turkey. Mix thoroughly until evenly combined.
- In a large skillet over medium heat, add a splash of oil and cook the sausage mixture. Break apart the meat and cook until browned and no longer pink.
2. Make the Gravy¶
- Sprinkle β cup flour over the cooked turkey. Stir well to coat the meat and cook the flour, about 1β2 minutes.
- Add 2 tbsp butter and stir until melted and incorporated.
- Gradually pour in milk, starting with 2Β½ cups (600 ml), stirring constantly to prevent lumps. Add more milk if a thinner consistency is desired.
- Season with black pepper, red pepper flakes, and salt to taste.
- Simmer until the gravy thickens to your liking, about 5β7 minutes.
3. Serve¶
- Pour hot gravy generously over freshly baked biscuits.
- Serve immediately and enjoy your spicy Southern breakfast!

- You can substitute the turkey with ground pork or chicken if preferred.
- To make it a full breakfast, pair with scrambled eggs or hash browns.
