Breakfast - Loaded Breakfast Bowl

A hearty, colorful breakfast bowl layered with crispy hash browns, scrambled eggs, sautéed veggies, bacon, avocado, and topped with creamy sour cream and fresh scallions. Perfect for a satisfying morning start. Serves 4. image.png


🥣 Ingredients

  • 4 bell peppers, chopped (any color)
  • 1 medium onion (approx. 150g), chopped
  • 6 strips of bacon (approx. 180g), chopped
  • 6 large eggs
  • 3 frozen hash brown squares
  • 2 ripe avocados, sliced
  • 4 tablespoons shredded cheese (e.g., cheddar or your favorite blend)
  • 4 teaspoons sriracha sauce (or sauce of choice)
  • 4 tablespoons sour cream
  • 2 scallions, thinly sliced
  • Salt and pepper, to taste
  • Oil or butter, for frying (about 1 tablespoon / 15ml)

🍳 Instructions

  1. Cook the veggies:
    In a large skillet over medium heat, add 1 tablespoon (15ml) oil or butter.
    Sauté the 4 chopped bell peppers and 1 chopped onion (150g) for about 8–10 minutes, or until softened and lightly browned. Season with salt and pepper to taste. Remove from pan and set aside.

  2. Fry the bacon:
    In the same or a separate pan, cook 6 chopped bacon strips (180g) over medium heat until crispy (about 6–8 minutes). Remove and drain on paper towels. Set aside.

  3. Scramble the eggs:
    In a bowl, beat 6 large eggs with a pinch of salt and pepper.
    In a clean skillet, cook over medium heat, gently stirring until fluffy and fully cooked (about 3–5 minutes). Remove from heat and set aside.

  4. Air fry the hash browns:
    Place 3 frozen hash brown squares in the air fryer at 360°F (182°C) for 14 minutes, flipping halfway if needed, until golden and crispy.

  5. Assemble the bowls (serves 4):
    For each serving, layer in this order:

  6. A scoop of the fried bell pepper and onion mix
  7. A portion of the scrambled eggs
  8. 1 tablespoon (15g) shredded cheese
  9. A portion of crispy bacon
  10. Half of a hash brown square, broken into chunks
  11. A few slices of avocado
  12. Drizzle 1 teaspoon (5ml) of sriracha sauce
  13. Top with 1 tablespoon (15g) sour cream
  14. Sprinkle with sliced scallions

  15. Serve immediately and enjoy warm.

  • Customize your sauce: try chipotle mayo, salsa verde, or hot honey.
  • Vegetarian? Skip the bacon and add black beans or sautéed mushrooms.
  • Make it dairy-free by omitting cheese and sour cream or using plant-based alternatives.
